DAD'S BEER CHICKEN

1 tbsp lemon juice, 4 tbsp butter, 3 to 4 lbs chicken pieces, 3 to 3 1/2 cup beer, 1 1/2 tbsp olive oil, salt and pepper

Basting:

Any barbecue sauce and olive oil mixture.

1/2 cup ketchup, 1 tsp hot sauce, 1 tbsp soy sauce, 1 tbsp brown sugar or honey, 4 tbsp olive oil.

Cooking Method :

Place the raw chicken in a bowl and add the lemon juice, mix it thoroughly with your hands.

Preheat oven to 375 degrees. Grease the baking pan with about 1 1/2 tbsp butter. Salt and pepper both sides of each chicken pieces and place them in the baking dish.

Pour in enough beer to almost cover the chicken. Cut the remaining butter into small cubes and scatter it on top. Add also some olive oil. Bake uncover for about 45 minutes.(basting occasionally)

DADDY'S RUM COCKTAIL

Combined 1 1/2 tbsp of lime juice with 1/2 tsp of granulated sugar, mix with 1 1/2 ounces of Barcadi rum. Strain the mixture through crushed ice.
