Chilli Cheese Oyster
16 large fresh Oysters, 1/2 cup grated cheese, 1 tbsp lemon juice, chili sauce ( oil base ), chopped basil for garnishing
Cooking Method :
Open and drain oysters, leave them in half shell. Using a teaspoon, add some drops of lemon juice, oil base chili sauce on each oyster and sprinkle on top with grated cheese. Garnish with chopped basil on top.
Place it in a baking sheet and use broil setting in the oven for about 2-3 minutes. Avoid over cooking the oysters it will toughen. Serve it right away.
Orange Prawn and Scallop Skewer
1 1/2 cups raw tiger prawns (peeled), 1/2 cup 1" square cut onions, 1/2 cup 1" square cut red peppers, 1 cup raw medium size scallops, 1 whole tangerine orange, 1 cup of yellow zuchini ( 1/4" thick slice ), Dash of salt and pepper
Basting : 1/4 cup ketchup, 2 tablespoon soysauce, 1 1/2 tbsp butter, 2 tablespoon olive oil.
Marinate for at least an hour the scallops and prawns with salt and pepper. Squeezed some tangerine orange on it.
Arrange it in a small bamboo skewer. Zuchini first then onions and peppers, then some prawns and onion and peppers again and lastly, the scallop at the end.
Basting each skewer before placing it on the grill and keep basting it occasionally while grilling. When prawns turns reddish in color and vege is slightly charred, your skewer is ready to serve.
Crispy Bake Calamari Rings
2 1/2 lbs raw squid rings, 1 1/2 cup butter or margarine, 1 package of potato chips, 1/4 teaspoon garlic salt, 1/4 tsp pepper, 1 whole lemon juice, 2 egg whites, 1 cup cornstarch, 1/4 tsp salt
Cooking Method :
In a bowl place the wash squid rings and squeeze one whole lemons on it. Mix it thoroughly with your hand. Make sure to remove lemon seeds.
On a separate small bowl beat white eggs, add 1 cup of cornstarch and 1/4 tsp salt and few drops of cold water if necessary to make some smooth batter. Deep each squid rings on the batter and place it on the wax paper and chill it for an hour.
Melt the butter in a small pan. Crush the potato chips using the rolling pin. Then mix the chips with the garlic salt and pepper on the aluminum foil.
Dip each squid rings in the melted butter and dash or cover them with the potato chips crumbs. Place squid rings in a greased baking sheet. Pour remaining butter and potato crumbs over the squid rings. Heat oven first, bake for about 30 to 45 minutes 350 degrees oven temperature.
Creamy Fingerfood Dip

1/2 tbsp minced garlic cloves, 1 tbsp finely chopped onions, 1 tbsp finely chopped carrots, 1 tbsp finely chopped green peppers, 1/2 tsp salt, 1 cup plain yogurt
Cooking method :
Blend carrots, green peppers, onions, garlic and salt together until finely coarse thick. Mash in a bowl the cottage cheese using a fork and mix the blended ingredients. Beat until smooth, add the yogurt and stir. Cover and chill.
