Turkey Salad with Honey Dijon Vinaigrette
Ingredients :
2 cups thinly sliced leftover roast turkey or or any broiled turkey
3 cups assorted greens (watercress, lettuce, baby spinach)
1/4 cup red bell pepper, seeded and juliene cut
1 cup red or black seedless grapes
1 cup cheese cut in cubes (optional)
2 tablespoons slivered almonds
1 1/2 tablespoon butter
Dressing Ingredients :
1 1/2 tablespoon mayonaise
2 tablespoon dijon mustard
1 tablespoon honey
1 tablespoon lemon juice
1 tablespoon wine vinegar
2 tablespoon olive oil
Dash with salt and pepper
Cooking Method :
1.) Melt the butter in a skillet over a medium to low heat. Stir in the almonds until lightly golden.
2.) Prepare the dressing. In a medium size bowl, mix honey, dijon mustard and mayonaise. Whisk in the vinegar, lemon juice and olive oil. Dash with some salt and pepper to your taste. Toss the dressing with your assorted greens, cheese and grapes.
3.) Arrange your assorted greens on a serving plate. Placing greens at the center and surrounded with the turkey meat and pepper slices. Sprinkle the buttered almonds on top of your salad as garnishing.
